Mac N Cheese Bites
These Mac N Cheese bites are super easy and cheap to make. I made these for a football party a week ago and they were a huge hit!! I adapted the recipe from an old Women's Day magazine I found in the breakroom at work.
Ingredients:
1 cup elbow macaroni noodles
1/2 stick of butter
1 tablespoon flour
1/2 cup cheddar cheese
1/2 cup mozzerlla or montery jack cheese
1 cup of whole milk
1 egg
2 mini muffin tins
Preheat over to 400 degrees.
Boil the macaroni noodles as directed from the box. Drain and set aside.
Put 1/2 stick of butter into warm sauce pan. Add flour and whisk for 2-3 minutes or until flour is browned. Slowly add milk and continue whisking for 2-3 minutes. Milk should become thick. Remove from heat and add cheese and egg. Pour cheese mixture over the macaroni noodles and mix; let sit for 5 minutes.
Generously grease the mini muffin tins. (You can use butter or non cooking spray). Use tablespoon to spoon mixture into mini muffin tins. Bake at 400 degrees for about 18-20 minutes. Let bites cool. Use plastic knife or spoon to remove mac n cheese bites.
Makes about 24.
