Healthy Taco Salad

Because this holiday season has not been so friendly to my waisteline, I am trying to modify my go to recipes in to healthier versions.  To get the crunch and fried taste of a taco shell I used Tostitos basked scoops as the base for my taco salad.  We ate this tonight and it was delicious!

Ingredients:
1lb extra lean ground beef (90/10 or 93/7)
1 cup shredded mexican cheese mix or cheddar (really any shredded cheese will work)
3 roma tomatoes
1 medium onion divided
 Baked Tostitos Scoops (you choose how many chips you want in the taco salad)
sour cream for garnish
small can mexicorn (I didn't use this time but I have before and it adds flavor)
1/4 cup chopped fresh cilantro
Mexican Rice (I used the Uncle Bens whole grain microwavable Spaish Rice)
1 tsp garlic powder
1/4 Package reduced sodium taco seasoning


Steps:

1.  Preheat a large pan to medium heat and add hamburger, about 1/4 package of taco seasoning, corn if you choose, garlic powder, and half chopped onion (I used 1/2 of a vadilla onion and 1/2 of a white onion because that is what I had in the fridge).  Cooking the onions with the hamburger gives the meat more flavor and because the meat is so lean, you won't need to drain it.  After meat is browned add cilantro.

 2.  Slice tomatoes, and remaining onion.  Heat Uncle Bens Rice packet or prepare Spanish Rice of your choice.  Lay selected amount of Scoops on  plate.  Pour warm hamburger over chips and add spanish rice.  Sprinkle shredded cheese mixture over rice and hamburger.  Add tomato, onions, and dallop of sour cream.
