Steak Stir Fry

Ingredients:
1 Red onion chopped
Handful of cilantro chopped
2 tbsp olive oil divided
1 tbsp worstershire sauce
1 lb flank steak or sirloin (you can also get steak for fajitas that is already cut into strips) 
1 package prepared rice (any favor) or minute rice prepared
1 green pepper chopped
2 eggs
1 clove of garlic
salt and pepper
1 tbsp soy sauce
Salt and Pepper

What to do:
Preheat 1 tbsp olive oil in large skillet. Cut steak into strips and add to skillet with garlic, wortershire sauce, and salt and pepper. Cook until well done and put in a bowl. Wipe out skillet and add 1 tbsp of olive oil. Add onions, green peppers, salt and pepper and cook for 3-5 minutes. Push onions and green peppers to the side and add both eggs. Let eggs cook about a minute and flip and chop into pieces. Mix veggies and eggs and add steak and rice. Add one tablespoon of soy sauce and mix everything together. Serve with your choice of sauce. I made a spicy mayo with spicy chili sauce and mayo and my husband used Country Bobs.

I love this loft!

I love the way this loft it setup and all the colors they used. One of my favorite things to do is go to antique stores and flea markets to find treasures! We lived in a loft downtown for a while and it was great for entertaining. The kitchen and family room/dining room were open like this one and it made the space seem so much bigger.

Healthy Taco Salad

Because this holiday season has not been so friendly to my waisteline, I am trying to modify my go to recipes in to healthier versions.  To get the crunch and fried taste of a taco shell I used Tostitos basked scoops as the base for my taco salad.  We ate this tonight and it was delicious!

Ingredients:
1lb extra lean ground beef (90/10 or 93/7)
1 cup shredded mexican cheese mix or cheddar (really any shredded cheese will work)
3 roma tomatoes
1 medium onion divided
 Baked Tostitos Scoops (you choose how many chips you want in the taco salad)
sour cream for garnish
small can mexicorn (I didn't use this time but I have before and it adds flavor)
1/4 cup chopped fresh cilantro
Mexican Rice (I used the Uncle Bens whole grain microwavable Spaish Rice)
1 tsp garlic powder
1/4 Package reduced sodium taco seasoning


Steps:

1.  Preheat a large pan to medium heat and add hamburger, about 1/4 package of taco seasoning, corn if you choose, garlic powder, and half chopped onion (I used 1/2 of a vadilla onion and 1/2 of a white onion because that is what I had in the fridge).  Cooking the onions with the hamburger gives the meat more flavor and because the meat is so lean, you won't need to drain it.  After meat is browned add cilantro.

 2.  Slice tomatoes, and remaining onion.  Heat Uncle Bens Rice packet or prepare Spanish Rice of your choice.  Lay selected amount of Scoops on  plate.  Pour warm hamburger over chips and add spanish rice.  Sprinkle shredded cheese mixture over rice and hamburger.  Add tomato, onions, and dallop of sour cream. 

3. Eat and Enjoy!! :)

Dooleycakes

Our new baby Dooley.  She was so timid when we met her at the SPCA.  Her tail was tucked under her legs and she didn't really pay attention to us.... Two months later you would never know it!!  This crazy girl is wild and happy!!  She runs and plays with her big brother and chews up everything she can get a hold of!!

What a sweet girl.  Everyone should be so lucky to adopt a dog.  :) 

Tacky Lights Tour!

Ok, so I must admit I was skeptical about the whole idea of loading a bus and driving around to a few houses for four hours... BUT boy was I wrong!!!  It was amazing!!  I love going out and getting drinks with friends, so any excuse to get 30 of them together sounds great to me!!  Everyone met at our place and started pre-gaming and eating snacks.  When the bus came I was shocked.  It was an actual tour bus.  I was a little worried because everyone was having such a good time just hanging out at our house and I was afraid people wouldn't mingle on the bus.  After one mile down the road I knew everything would be just fine.  And when I say fine I mean awesome!!


The tour guide and bus driver were great!  They had coolers for us to ice our beer down and let us blast whatever music we wanted.  The houses were amazing, and one even felt like a theme park complete with activities and a snack stand. 


After the first hour everyone felt pretty good and the drinks were definitely flowing....the driver even stopped at Wawa (a gas station) for a snack and beer run!  Not to mention multiple smoke stops and he even made a stop a Curbside for the people who wanted to go out after the tour.  All in all the trip was definitely worth every penny.  The price was a little high (about $900-$1000ish) for the big bus; but if you have a good group it is well worth 50 bucks per person! (Think about it.. that is a fairly cheap bar tab for a night out). I would defnitely recommend James Limousine because they were amazing!  AND they didn't require any clean up, they covered everything!! 

If you live in Richmond you should definitely make the tacky lights tour part of your Christmas tradition!
